Sneaking in Your Greens: Part I

When I started writing, I had grand plans of learning how to cook better, more inventive meals and sharing them with you. Now I realize that it ain’t going to happen like that.

So how about being more realistic?

With all the running around we do, we eat fairly basic meals around here, but we always try to keep them balanced and healthy. Letsbehonest- many of us are pulled in a million different directions and cooking an elaborate meal after work is probably not that appealing.

So let’s keep it simple shall we?

How about this; make an effort to eat something green at least once a day, for one month. If you want to see some real, very green meals and have a laugh while you’re there, swing over to FoodofmyAffection and say hello to Shana who is setting 12 goals for 2012. May’s goal: get your greens in!

For my part, I’m going to focus on simple meals and snacks that are easy to make and don’t require having a ton of unique ingredients available in your pantry. Oh, and I’ll probably use a loose definition of “greens”. There’s a good chance that I’ll consider it green if it comes out of the ground and is or was green at some point. You’ve been warned.

Now, here’s an easy one: add spinach to your pasta. This is so simple and really requires little effort, which is great if you’re feeling lazy tired after a long day. First, select your pasta. Second, cook your pasta. Third add baby spinach and sauce and toss together. The spinach will wilt quickly and isn’t that noticeable for those of you with picky eaters.

Since we’re trying to keep it healthy, we decided to add protein to our mix. This weekend I came across some al fresco sweet apple chicken sausage and I figured why not? What’s the worst that can happen? After all, there are a few foods that I really dislike…you know…like CHICKEN and SAUSAGE!

Something crazy happened when the two came together and I liked it.

Did I like it mixed in with red sauce? Maybe not; although the combination was an interesting mix of sweet and tangy, I don’t know if I’ll make it with the sweet apple sausage again (really, what was I thinking?), but I would definitely try another one of their recipes.
